I used to be a big fan of almond fish and it was one of my absolute favorite foods since my school days. The best almond fish was coated with a generous layer of wonderfully crunchy and juicy almond coating, which was oozing with melted butter.

I missed this classic delicacy so much that I had to start making my own recipe.

So if you're looking for an easy and delicious dinner, try this vegan version of the Sunday dinner classic, almond fish. This recipe has all the same ingredients as the traditional almond fish, but the fish has just changed to tofu.

The recipe is easy and even a beginner can make it.

Serve with, for example, mashed potatoes - that is how it's traditionally served here in Finland.

For this recipe you will need:

  • medium or large baking dish
  • a small pot for making the frosting

Ingredients needed

This recipe can be made with very few ingredients:

  • 2 unseasoned blocks of tofu
  • Herbamare herbal saltthis is an essential ingredient!
  • vegan margarine
  • breadcrumbs
  • almond chips
  • oat-based cooking cream
  • vegan cheese grater - I recommend it Porlam's Vege Plus
  • wheat flour
  • salt and black pepper

Serve almond tofu with, for example, mashed potatoes - this is how it is traditionally served here in Finland.

Making almond tofu

Split the tofu horizontally into two parts, as shown in the picture below. Place the tofu slices in the pan and season them with Herbamare herbal salt.

Rub herb salt under, on top and around the edges of the tofu slices. Without careful salting, the tofu's characteristic flavor is too strong, and not even a thick layer of almond glaze can save it. (I have tried.)

Cook the tofu slices in the oven for 10 minutes. Meanwhile, prepare the almond glaze.

Note that some of the almond chips are left aside for toasting, so not all of them are used for the frosting.

Add all the frosting ingredients to a small saucepan and heat them over low heat until the margarine and cheese melt and the frosting becomes a smooth mixture. This will only take a few minutes.

At this point, check the taste of the frosting and add a small pinch of salt if you feel it needs it.

Remove the pan from the oven and spread the frosting over the tofu slices. Move the pan back to the oven and cook for another 25-30 minutes until the frosting has taken on color.

While the glazed tofu is cooking in the oven, toast the remaining almond flakes in a hot pan, turning them constantly with a spatula, until they take on a little color.

Sprinkle the toasted almond flakes on top of the frosted tofu.

Serve this classic with, for example, mashed potatoes. I recommend that you also spoon the wonderfully delicious frosting and melted butter on the bottom of the pan over the mashed potatoes 😋

  7. Remove the pan from the oven and spread the frosting over the tofu slices.
  8. Move the pan back to the oven and cook for another 25-30 minutes until the frosting has taken on color.
  9. Toast the rest of the almond chips in a hot pan, turning them with a spatula constantly, until they get a little color.
  10. Sprinkle the toasted almond flakes on top of the frosted tofu.
  11. Serve almond tofu with, for example, mashed potatoes.
