With this recipe, you make wonderfully crunchy American chocolate chip cookies.

I waded through dozens of American non-vegan cookie recipes for this, but all the cookies were more chewy than crunchy, so I had to develop my own recipe. I combined the best aspects of all of them here, and the recipe turned out to be super good!

The children don't mind at all when I develop these new recipes? They have been eager to taste each test batch.

Tip: The dough can also be used to make homemade cookie dough ice cream. All you need is oat vanilla ice cream and this cookie dough. Crumble the dough into the ice cream and enjoy immediately. Yum!

A few words about measuring ingredients

The dough is really easy to prepare, but it is important that you measure the amount of flour and margarine carefully.

Either use a kitchen scale or fill the deciliter measure up to the mark but not over. If you dose the flour into the measuring cup with a spoon, the end result is more reliable.

Fill the measuring cup completely with margarine as well. Press with a knife and make sure that the whole kippo is really full and there are no air pockets.

Which chocolate is suitable for vegan cookies?

I made cookies with two different chocolates. The first one was Spicy dark chocolate chip, which is an easy alternative when you can't or don't have time to chop a chocolate bar. However, I don't think this chocolate is completely vegan.

Guaranteed completely vegan and really good chocolate for all baking Panda dark chocolate. This is my absolute favorite chocolate!

Making cookie dough

You need two medium-sized bowls for the dough. Mix the dry ingredients together in the first bowl.

Measure the margarine into another bowl and add the vanilla flavoring to it. Beat the mixture for about 30 seconds until the margarine is fluffy and soft.

Mix the dry ingredients into the margarine and mix well. The dough should now be easy to shape, but not too wet. It should now look something like this:

Roll the dough into meatball-sized balls on the baking paper. If you want chocolate chips to be visible on the surface of the cookie, make sure that pieces of chocolate are visible on the top surface of each dough ball. If all the chocolate chips are inside the ball, the cookies will be just as delicious, but the chocolate will remain hidden inside the cookie.

What if the dough is too dry?

If there is too little margarine, the dough will be too dry and it will be difficult to roll into balls. You can warm the dough between your hands and try to roll it into balls.

However, do not under any circumstances add water to the dough! (I tried it, and I can't recommend it.) If you add water, the dough will be too firm and the dough balls won't spread in the oven.

You can fix dry dough by adding a little margarine. Be sure to whisk it before adding it so it mixes well with the batter.


Transfer the dough balls to the oven and bake for 12-13 minutes. The dough must be "spread" in the oven like a snowman in the spring, so that the cookies will be round and of the right thickness:

Remove the cookies from the oven as soon as the baking time is up, so that the cookies don't have time to brown. An orthodox chocolate chip cookie is light in color.

Using a spatula, lift the cookies to cool on e.g. a cooling rack.

These cookies are at their best when completely cooled, so experience Malta for a moment before you start tasting! I know it can be hard…

  • 1.5 dl margarine (1.5 dl = 160 g)
  • 1 tsp vanilla extract
  • 3 dl wheat flour
  • 1 dl potato flour
  • 1 dl sugar
  • 0.5 dl of brown cane granulated sugar
  • 0.5 tsp salt
  • 0.5 tsp baking soda
  • 100 g chocolate chips or grated dark chocolate


  1. Preheat the oven to 200 degrees Celsius (400 Fahrenheit).
  2. Beat the margarine and vanilla flavoring in a bowl for about 30 seconds until soft and fluffy.
  3. Mix the dry ingredients, i.e. all the remaining ingredients together in another bowl.
  4. Add the dry ingredients to the margarine mixture and mix well.
  5. Roll the dough into meatball-sized balls on the baking paper.
  6. Bake in the oven for 12-13 minutes. Be careful not to brown the cookies!
  7. Cool and serve.
