Over the weekend, I developed a new version of this easy soy and potato casserole, which I have cooked many, many times. The original is one of our Top 10 favorite dishes, but sometimes it gets boring to eat the same dishes too often.

This time I added vegetables and left out the salsa and chili sauces completely. I replaced the soy meal with juicy vegan "minced meat". The end result is a mild-tasting and wonderfully creamy casserole that is suitable even for the youngest in the family.

For this recipe you will need:

  • baking tray
  • frying pan or (large) pot for making the sauce

Ingredients needed

This time we want to go easy, so you need a large bag (1 kg) of ready-made potato and onion mixture and one bag (approx. 300 g) of frozen vegetables.

As a protein source, we use ready-made veggie mince, which is sold in a package similar to minced meat. We happened to have Muu veggie mince, but you can use any other brand that is available.

Frying the casserole - in 2 ways

The easiest way to cook a casserole is to bake it directly on the baking sheet. You'll get by with less washing up, and if you have an oven, you're guaranteed to have an oven tray as well.

Alternatively, you can cook it in a large baking dish, but then there will be a thicker layer of potatoes and the baking time will be longer. It can be even more than an hour, depending on the size of the potato strips.

For this reason, I always prepare this casserole on a baking sheet and finally transfer it to a nicer container if there is a need to display it beautifully. And usually there isn't 😄

Preparing the casserole

Heat up the oven.

Line a baking sheet with baking paper and make sure the baking paper covers the entire sheet. It's good if the paper goes a little over each edge, because there will be a lot of casserole, and we don't want the liquid from the potatoes to run past the paper.

Take out a frying pan or a large pot, and brown the veggie mince until cooked, so that it gets a little color on the surface. Add the spices, garlic, cream and grated cheese to the mix.

Tip the potato and onion mixture and the frozen vegetables onto the baking sheet, and then mix the veggie mince sauce you made in the previous step over them. Mix until smooth.

Ready mixture before baking

Bake in the oven for about 40 minutes until the potatoes are cooked (test with a fork) and the casserole has gotten a little color on its surface.

  • 100 g grated vegan cheese
  • 2 crushed garlic clove
  • 1 tsp salt
  • 0.25 tsp black pepper

  4. Add cream, grated cheese, pressed garlic and spices to the mixture.
  5. Cook the sauce over low heat until the cheese starts to melt.
  6. Tip the potato and onion mixture and the frozen vegetables onto the baking sheet, and then mix the veggie mince sauce you made in the previous step over them. Mix until smooth.
  7. Bake in the oven for about 40 minutes, until the potatoes are cooked and the casserole has gotten a little color on the surface.
