This recipe was initiated by my firstborn. He is now at the age where he reads youth magazines and wants to try the recipes found in them. There was a nice-sounding mug cake recipe in the latest Girl:It magazine, but it didn't really work without eggs and the end result was perhaps a little too healthy for such sugar mice anyway!
So we set out to develop our own vegan recipe. We copied the raspberries, nuts and coconut from the original recipe, but we threw in the rest on our own. The end result is wonderfully light, fluffy and cake-like.
It took a couple of tries (my child counted 5), but we are now really happy with the end result! And by the way, was it nice to develop a recipe together?

What the hell is a mug cake?
A mug cake is a cake that is made in a microwave oven in a small container, for example a coffee cup or a tea mug. The cake can be eaten directly from the mug, or it can be turned onto a plate.
The mug cake can be prepared in the microwave in less than 5 minutes. If you need quick relief from a sweet tooth or you have surprise guests at your door, you can conjure up this delicacy literally in a couple of minutes.
Note that the cake is really small, enough for 1-2 people. If you are making these for several diners, make a larger amount of batter, divide it into mugs and bake the cakes individually. It only takes 1.5 minutes to cook one cake in the microwave.
Making a mug cake: steps
The recipe is wonderfully simple and can be done by a primary school-aged child without the help of an adult.
Raspberries should be crushed into smaller pieces before use. You can use fresh or frozen raspberries, but it would be good if they were domestic, because the cake is only cooked for a very short time.
Mix all the ingredients together in a small bowl.

Grease the mug and pour the dough into the mug.

Cook in the microwave. The finished cake looks something like this:

The cooked cake can be inverted onto a plate, as in the picture below - you have to shake the mug slightly or tap it from the bottom so that the cake comes off.

Ingredients
- 3 tbsp of unsweetened soy yogurt
- 2 spoonful of nutmeg
- 3 tbsp of sugar
- 1 tsp baking powder
- 1 tbsp coconut flakes
- 1 tablespoon of rapeseed oil
- 0.5 tsp lemon juice
- 0.5 dl wheat flour
- 3 raspberries
Valmistusohje
- Crush the raspberries into smaller pieces.
- Mix all ingredients in a bowl.
- Grease a medium-sized tea/coffee mug (e.g. Moomin mug, 3 dl) or other small container. If you use a smaller container or make more dough at once, fill each container only halfway.
- Cook in the microwave at full power for 1.5 minutes.
- Invert the mug cake onto a plate or serve it directly from the mug.
