Huh, we have baked cookies right at work again! I wanted to develop chocolate chip cookies based on a new vegan cookie dough, this time with peanut butter, and it took a couple of tries again. The first one was already pretty good, but I was aiming for perfection, so I had to make a second batch as well...
But it was worth it! With this recipe, you will bake wonderfully delicious and crunchy nut cookies for the whole family to enjoy. The recipe is easy to prepare and the cookies are ready in half an hour.
The dough makes about 35 cookies, of course depending on how big balls you roll out of the dough.

Equipment needed
For this recipe you will need:
- 1 fairly large bowl of dough
- electric mixer

A few words about measuring ingredients
The dough is really easy to prepare, but it is important that you measure the amount of flour and margarine carefully.
If there is too little margarine, the cookies will not "spread" in the oven and the shape will not become cookie-like. If there is too much margarine, the dough is so wet that it is difficult to form balls.
Making cookie dough
You can get by with one bowl of dough in this recipe. First, measure the vegan margarine into a bowl and soften it by whipping it with a hand mixer until it is fluffy and soft.
The margarine must be softened so that it can be mixed evenly with the other ingredients.

Add salt, sugar, baking soda and vanilla flavoring. Mix well again so that all these are mixed into a smooth mixture.
Add all the remaining ingredients and mix well again. The dough should now be easy to shape, but not too wet. It should now look something like this:

Roll the dough into meatball-sized balls on the baking paper.

What to do if the dough is too dry
If there is too little margarine, the dough will be too dry and it will be difficult to roll into balls. You can warm the dough between your hands and try to roll it into balls.
However, do not under any circumstances add water to the dough! If you add water, the dough will be too firm and the dough balls will not spread in the oven.
You can fix dry dough by adding a little margarine. Be sure to whisk it before adding it so it mixes well with the batter.
Baking cookies
Transfer the dough balls to the oven and bake for 12-13 minutes. The balls of dough have to spread in the oven like a snowman in the spring, so that the cookies eventually become round and just the right thickness.
Remove the cookies from the oven as soon as the baking time is up, so that the cookies don't have time to brown. The cookie should be light in color.

Using a spatula, lift the cookies to cool on e.g. a cooling rack. If you can't find a wire rack, you can leave them to cool on the baking sheet.
The cookies are at their best when completely cooled, so experience Malta for a moment before you start tasting.
Making cookie dough ice cream
The dough can also be used to make homemade cookie dough ice cream. All you need is oat vanilla ice cream and this cookie dough.
Crumble the dough into the ice cream and then put the mixture back in the freezer for a while. Or just eat it straight away, it's just as good!
