The composition and taste of the puree varies slightly depending on the variety of pumpkin you choose. The usual orange harvest pumpkin (the so-called Halloween pumpkin) is very watery and you have to drain excess water from the puree. However, the taste is pleasantly mild and goes well with, for example, pumpkin pie. The Japanese Hokkaido pumpkin is firmer and the puree is thicker than thick mashed potatoes.

Hokkaido pumpkin is illustrated in the instructions, but the same cooking method works with any variety of pumpkin.

  2. Cut the pumpkin into large blocks (about 8 x 15 cm).
    Tip: If you use a pumpkin with a tapered end, first cut off the cap of the pumpkin. Then cut it into blocks vertically, as shown in the picture.

  3. Remove the seeds.
  4. Place the blocks on the baking tray with the skin facing up or down - it does not affect the end result.

  5. Cook in the oven for 45 to 60 minutes, depending on the size of the blocks.
    Small blocks are cooked in half an hour. When the pumpkin is fully ripe, the fork sinks into it effortlessly like melted butter.

  6. Remove the skins of the pumpkin by cutting with a knife or scoop out the insides of the pumpkin with a large spoon.
  7. Puree until smooth, e.g. with a hand blender.
  8. If the puree is very watery, put it in a colander and drain at least half of the liquid. At the same time, you should stir the puree so that the excess liquid is removed faster.
