This time I also baked a laskias bun in the form of a boston cake. Cream cheese flavored with bitter almonds and almond flour brings a nice flavor to the cake, but the almond flavor is by no means too overpowering. You can leave out the bitter almond if you want, the filling is good anyway.
By the way, I have to say: I've never been enthusiastic about almond-filled laskais buns, but I fell in love with this filling so much that the regular laskais buns tasted really bland next to it. Well, of course I didn't leave out the jam either... but I put them all together in the same bun. Almond filling + jam + whipped cream - it's super good by the way!

I took inspiration for the filling From the K-food recipe, but I made the bun dough with this vegan bun dough recipe using dry yeast.
Almond cream cheese filling
The filling includes vegan cream cheese (e.g. Oatly påMackan), almond powder, powdered sugar, vanilla sugar, a couple of drops of bitter almond flavoring and a little water.
Mix the filling ingredients together and leave to wait for the bun dough to be ready.
Assembling the Boston Cake
When the bun dough has doubled in size, roll it out on a floured surface or on baking paper into a disc about 40 x 50 cm in size.

Spread the almond-cream cheese filling on the dough sheet. Then roll it along the long side into a roll and cut into pieces about 3-4 cm wide.
Arrange the pieces in the pan and rise under a cloth for about 30 minutes.
Lubrication and decoration
Brush the bun with a mixture of maple syrup and vegetable milk. Sprinkle the surface with, for example, almond chips, ground almonds or granulated sugar.

Tip: The fried and cooled bun can also be decorated with powdered sugar at the end.
Baking a Boston Cake
Bake the boston cake on the middle level of the oven at 200 degrees for 25-35 minutes until it is cooked and beautifully golden brown on the surface.
With a bun made with plant milk, there is usually no risk that the surface will darken too much when baking (rather too little), but if the surface takes on too much color, you can put a strip of foil or baking paper on top of the cake to protect it at the end.

Cool the bun. Cut into slices and serve either as is or with strawberry jam and whipped cream.

Filling
- 150 g unflavored vegan cream cheese (e.g. Oatly påMACKAN)
- 100 g almond powder
- 1 dl powdered sugar
- 2 teaspoon vanilla sugar
- 3 drops of bitter almond aroma
For lubrication
- 1 tbsp maple syrup
- 1 spoon vegetable milk
For decoration
- 0.5 dl almond chips
- 2 tablespoon granulated sugar
In addition
- 2 dl of vegan whipped cream
- 1 dl strawberry jam

- Prepare bun dough and double it.
- Prepare the filling by mixing all the filling ingredients together. If the filling is too hard to spread, add a little water.
- Roll out the dough on a floured surface (e.g. on baking paper) into a disc about 40 x 50 cm in size.
- Spread the almond-cream cheese filling on the plate.
- Roll the sheet parallel to the long side into a roll, like a wrapped tart, and cut it into 3-4 cm wide pieces.
- Place the pieces in the pan.
- Cover the pan with a cloth or baking paper and let it rise in a warm, draft-free place for about 30 minutes until it looks like this:
- Preheat the oven to 200 degrees Celsius (400 Fahrenheit).
- Grease the bun with a mixture of syrup and vegetable milk.
- Sprinkle almond flakes and granulated sugar on top.
- Bake the bun on the middle level of the oven for 25-35 minutes.
