Kuopus had a kitchen shift and he prepared a big plate for us really delicious smoked tofu sandwiches. These breads just somehow made me feel so good! They had all the right flavors - the combination of smoked tofu and mustard always works. And yet, this recipe is super easy and quick to make.
The preparation of these breads can be done completely independently from about 9 years of age onwards. This is mainly because chopping the ingredients and frying them in a pan may require an adult's help if it is a very small child.
These breads are at their best warm, but they are also delicious chilled. Prepare these for e.g. a picnic or as a snack on a car trip. The loaves stayed together quite comfortably and did not fall apart in our hands. If you want, you can halve them either in the middle or from corner to corner (triangle loaves), so they stay in place even more easily.
The recipe has 5 easy steps:
1. Spread the bread with mustard
Spread mustard on each piece of bread. We used mild basic mustard, so it was put on quite a generous layer. If you use Dijon mustard or some other hotter mustard, it should only be applied in a very thin layer.
After that, put half of the bread pieces aside to wait - they will become the lid pieces for the warm breads.
2. Dry and slice the tofu
Drain most of the water from the tofu by pressing it with a paper towel. However, for this recipe, the tofu does not need to be dried particularly carefully, it can remain moist and juicy.
Slice the tofu and spread 1-2 slices of tofu on each base piece smeared with mustard.
3. Slicing the tomatoes
Slice the tomatoes - you can use any tomatoes for this, big or small. Place a couple of tomato slices on top of each bottom piece to accompany the tofu.
4. Add grated cheese
If you use block cheese, first grate it with a fine blade. With a fine blade because the cheese melts better then and generally looks better between the breads.
For example, I recommend the following cheeses:
- Porlam's Vege Plus
- Nurissh grated cheese (pictured below)
- Ilo Vegan Pizzamuru
Sprinkle about 0.5 deciliters of grated cheese on top of each bottom piece. Now the bread is topped with mustard, a slice of tofu, tomato slices and grated cheese.
5. Fry the breads in a pan
Heat a frying pan and melt about a teaspoon of vegan margarine in the pan - or alternatively, add canola oil to the pan.
Add a cover piece smeared with mustard on top of each base piece and press the bread a little lower.
Fry the bread in a pan on medium heat for about 5 minutes per first side. Turn the breads over and fry on the other side as well.
