K-food soft leek-potato puree soup has remained in my recipe folder for ten years and for a long time was one of the few vegetarian dishes that the whole family agreed to eat.

Over the years, I modified the recipe to make it even easier by replacing the potatoes with mash powder and the cream cheese with Koskenlaskija. Easy and tasty. Children's favorite soup. The right credit prescription.

But how on earth could you get a tasty vegan version of this that is faithful to the original? After various experiments, I found suitable vegan ingredients for the recipe and this wonderful soup can find its way to our table again. Lovely autumn food?

A wonderfully soft leek-potato soup is suitable for autumn and winter.


Ingredients

Scale
  • 400 g leek (400 g = 2 small or 1 large)
  • 200 g yellow onion
  • 3 spoonful of margarine
  • 1.6 l of water
  • 2 vegetable stock cube
  • 400 g Oolanni mashed potatoes (frozen)
  • 200 g Sheese Garlic & Herb cottage cheese (vegan)
  • 0.5 tsp salt
  • 1 a pinch of black pepper

  • roasted onion grits

Valmistusohje

  1. Peel the onion. Split the leek lengthwise and rinse off the sand.
  2. Chop the leek and onion. You can leave them in fairly large (about 2-3 cm) pieces, as they will be pureed at the end.
  3. Add the margarine to a large saucepan. Heat the pieces of leek and onion in a saucepan over low heat for about 5 minutes until they are translucent (as in the picture).

  4. Add water, vegetable stock cubes and black pepper.
  5. Cook for about 15 minutes on medium heat until the vegetables are soft.
  6. Puree with a hand blender until as smooth as possible.
  7. Add the Sheese cream cheese and stir until it completely melts into the soup.
  8. Add the mashed potato ingredients and simmer on a low heat for about 5 minutes, until the potato completely melts into the soup and warms up.
  9. Serve with roasted onion grits and good bread.
