I'll continue series of cheap everyday meals with a delicious vegan macaroni box. This classic is an affordable alternative even normally, i.e. made with minced meat, but with soy meal, it creates a real low-budget meal.

However, I must say that the recipe is above all else delicious. Over the past year, I have made numerous versions of this traditional macaroni box, and only now has a version emerged that I want to publish on the blog.
This box of macaroni has everything right – taste and texture. When eating it, you might forget you're eating the vegan version.
This recipe is also easy to make even for a beginner. Below I show step by step how the food is prepared.

For this recipe you will need:
- for a large pot of pasta
- frying pan
- and preferably with a hole so that the pasta cooking water can be easily poured out
Only basic ingredients are used for this macaroni box. You will need:
- dark soy meal
- a medium-sized yellow onion
- almond milk
- soy flour
- soy sauce
- salt, black pepper, paprika powder and onion powder for seasoning

Note: I do not include spices in the total cost, because they are very basic spices that you probably already have. And if you can't find them, you can get them really cheaply for around 0.5? per spice bag.
Soy flour is probably a product that is not available in every household. However, it is a good and inexpensive product, which will later be a pleasure in many other dishes. Protein-rich soy flour can be added on its own to, for example, flatbread, savory pies and smoothies.
Soy flour strengthens the dough, so it can also be partially used as an egg substitute, as in this recipe.
- 400 g macaroni = 0.39 ?
- 2 dl soy meal = 0.55 ?
- 1 yellow onion = 0.26 ?
- 5 dl of almond milk = 1.35 ?
- 2 tbsp soy flour = 0,12 ?
- 0.5 tsp soy sauce = 0.05 ?
Total price of the recipe: 2.72 ? i.e. 0.45? per serving, assuming the recipe makes enough for six people.
This is how you make a vegan macaroni box (which is just like the real thing!)
Start preparing the macaroni box by boiling about 4 liters of water and 1 teaspoon of salt in a large pot. Cook the pasta until cooked according to the instructions on the package.
Preheat the oven to 225 degrees.
While the pasta is cooking in the pot, chop the onion into small cubes and fry it in a frying pan in about a tablespoon of oil. When the onion pieces are soft and translucent, add soy meal and another 0.5 dl of oil.
Add salt, black pepper, onion powder and paprika powder to the mixture, and continue cooking for a couple of minutes.
The amount of oil may seem like a lot, but it brings authentic flavor and texture to the macaroni box. The traditional macaroni box has quite a lot of fat due to the minced meat. If you make a vegan version and don't replace the ground beef with anything, your macaroni box will be dry and tasteless.
When the pasta is cooked, pour off the water and transfer the cooked pasta to a large baking dish.
Add the soy grits mixture to the pasta.
Prepare an egg milk substitute by combining almond milk, soy flour and a splash of soy sauce in a small container. Mix the mixture as evenly as possible with a whisk, for example.
Almond milk is too sweet on its own, so you should add a little soy sauce to smooth out the taste.
Pour the egg milk replacer into the pan with the pasta and soy meal. Mix until smooth. The liquid should reach up to the top macaroni - not necessarily over them, but close.
Bake the macaroni box in the middle of the oven for about 45 minutes.
Serve, for example, with grated carrot - you can often find that for less than a kilo, so it's a suitable and really fresh low-budget side dish for this box of macaroni.Tulosta
