It's wonderful when the grilling season has started! Here is one of my favorite side dishes, which is prepared by itself in the oven while you are grilling other ingredients. The recipe is a vegan variation from the gardener's cabbage pot.

Cauliflower topped with cheese sauce is wonderfully succulent and works as a sauce and side dish for other dishes. It has a nice neutral taste and goes well with many other dishes.

Vegan cheeses suitable for the recipe

You should choose a mild-tasting vegan cheese for this recipe. For example, I recommend Porlam's Vege Plus (or Vege Plus Gouda) cheese with a neutral taste, which can be found in almost every grocery store.

I have also tried Violife's cheese for this, but the end result was disappointing. Violife's cheeses have such a distinctive aroma that for many the so-called for those switching from regular cheeses, they may taste strange. You should only use them in this recipe if you absolutely know you like them.

Ingredients

  • 450 g cauliflower (fresh or frozen)

Cheese sauce

  • 3 spoonful of margarine
  • 3 tbsp wheat flour
  • 3 dl of cashew or almond milk
  • 0.5 tsp salt
  • 2 dl grated vegan cheese
  • a pinch of black pepper
  • 2 tbsp dried parsley

Valmistusohje

  1. Preheat the oven to 200 degrees Celsius (400 Fahrenheit).
  2. Cut the cauliflower into pieces of equal size. If you are using frozen cauliflower, it is already cut into pieces.
  3. Boil (fresh) cauliflower in salted water until just tender, about 5 minutes. Frozen cauliflower does not need to be cooked.
  4. Pour off the water and put the cauliflower aside to wait.
  5. Prepare the cheese frosting. Melt the margarine in a saucepan and then add the flour and mix.
    Add about 0.5 dl vegetable milk and mix carefully with a whisk so that the sauce becomes smooth and does not leave lumps.

  6. Then add the remaining vegetable milks, spices and grated vegan cheese.

  7. Grease the baking dish and put the cauliflowers in the dish.

  8. Spread the cheese sauce over the cauliflower.

  9. Bake the flower casserole in the oven for about 15 minutes, until it has a little color on the surface.
