Did you know that most meat flavored noodles are actually vegan? So that meaty taste has been created artificially. At the same time, this is really good news for vegans!

We often buy chicken-flavored instant noodles, but the spice bags themselves often go unused, because I like to make my own spice mixes. So these little spice bags either fly into the trash or get left spinning at the bottom of the cupboard.

But don't throw them away!

Next, I will present a really easy chicken-flavored vegan pasta, for which you can use these super handy spice bags. If you use Mama brand chicken noodles, you can be sure that the spice mixture is vegan. If you use another brand, first check what it contains.

You need a total of 4 of these spice bags, i.e. from four noodle packages. This recipe only uses that actual spice mixture, not chili powder. If you need more heat, you can of course add that to the mix.

What the hell is Palermo pasta?

Palermo pasta is originally chicken pasta and a very popular school food in Lahti. It has even won a national school food competition.

My own children didn't know it before, but apparently the taste was nice institutional (in a good way), because they fell in love with it immediately. And yes, adults liked this too! As proof of a successful recipe: we have already made this at least three times this winter.

The recipe is wonderfully straightforward, because you don't even have to cook the pasta in advance. The pasta is put into the oven raw with seasoned soy meal and chicken-flavored sauce.

Vegan Palermo pasta

1. Cook and season the soybean meal

Instead of chicken, we use light soy meal, which is prepared quickly. Cook the soybean meal with water in a small pot, then add the spices.

2. Prepare the chicken flavored sauce

For the chicken-flavored sauce, first melt the vegan margarine in a small saucepan. Add wheat flour to it. Pour in 5 dl of water, but only 1 dl at a time. Mix carefully with a whisk every time you add water to make the sauce wonderfully smooth.

Tip: If lumps remain in the sauce despite everything, you can eventually smooth it out with a stick blender. If you can't find a stick blender, you can also drain the sauce through a strainer.

Add the cream, spices and grated cheese, and let the cheese melt. The sauce is now ready.

3. Bake in the oven

Pour the raw pasta into a large baking dish, and pour in the soy flour mixture and the chicken-flavored sauce. Mix everything together.

Bake in the oven for 50-60 minutes until the pasta is cooked. In the final phase (the last 10 minutes), you can use convection or grill resistance to get more color on the surface of the pasta.

Did you know that most meat flavored noodles are actually vegan? Today we use the spice mixes that come with the noodles and prepare a really authentic tasting but vegan "chicken pasta".


  • 400 g patterned pasta (e.g. clam pasta)

Seasoned soybean meal

  • 2 dl light soy meal
  • 5 dl of water
  • 2 crushed garlic clove
  • 2 teaspoon curry
  • 1 tsp salt
  • a pinch of black pepper

Chicken flavored sauce

  • 3 spoonful of margarine
  • 0.5 dl wheat flour
  • 6 dl of water
  • 4 bag of chicken-flavored noodle seasoning mix
  • 2.5 dl of vegan cooking cream
  • 1 teaspoon tarragon
  • 1 tsp paprika powder
  • 0.25 tsp salt
  • 100 g vegan grated cheese


  1. Preheat the oven to 175 degrees Celsius (350 Fahrenheit).

Seasoned soybean meal

  1. Cook the soybean meal with water in a small pot for 5 minutes.
  2. Add garlic, curry, salt and black pepper.

Chicken flavored sauce

  1. Melt the margarine in a saucepan and add the wheat flour. Stir.
  2. Pour in water, 1 dl at a time. Mix thoroughly with a whisk every time you add water to make the sauce smooth.
  3. Add the noodle seasoning mixtures, cooking cream, tarragon, paprika powder, salt and grated cheese.
  4. Let the cheese melt into the sauce.


  1. Pour raw pasta into a large baking dish.
  2. Add chicken-flavored sauce and cheese sauce. Stir.
  3. Bake in the middle part of the oven for 50-60 minutes, until the pasta is cooked and has a little color on the surface.
