At Christmas time, we have cooked rice porridge with many different vegetable milks and we have found a favorite. We really like the combination of cashew milk and vanilla flavored soy milk. The mixing ratio of these can be varied according to your own taste. Working mixing ratios include, for example
- 1:1 (half and half)
- 6:1 (mostly cashew milk + a little vanilla flavored soy milk)
Or anything in between. You can find the mixture that suits you by experimenting. The porridge shown in the picture has been cooked with a half and half mixing ratio, so the porridge has got quite a lot of yellow color from the vanilla milk.
The vanilla-flavored soy drink makes the porridge sweeter and more yellow in color, while cashew milk alone is mild, gray-white and tastes like hyla milk. You can use plain vanilla drink on its own, although then you're already closer to vanilla-flavored rice pudding than traditional rice porridge - but not any crazier either!

In this recipe, rice porridge is made with cashew milk and vanilla-flavored soy milk in a mixing ratio of 6:1.
Ingredients
- 2 dl porridge rice
- 2 dl of water
- 1.2 l Alpro Cashew drink (cashew milk)
- 2 dl Alpro Vanilla drink (vanilla-flavored soy milk)
- 0.5 tsp salt
Valmistusohje
- Boil water and brown rice in a pot until almost all the water has been absorbed into the rice as shown in the picture.
- Add cashew milk and vanilla flavored soy milk.
- Cook on low heat under the lid for about 40 minutes, stirring occasionally. Do not let the porridge stick to the bottom of the pot.
- Season with salt.
