This savory pie is perfect for lunch, dinner parties and a picnic snack. The pie is not spicy, so it is suitable for the whole family. If on the other hand you prefer spicier pie, just add a little more chili sauce to the filling.

The pie is easy to make and you can use for example this savory pie crust. I usually use whole wheat flour for this pie base, which makes the base especially tender and tasty (and at the same time a little healthier).

I got inspiration for this recipe from K-food's chicken and corn pie. It used to be one of my favorite pies, so I wanted to come up with a vegan version that would be just as good as the original. And this one is!

Equipment needed

For this recipe you will need:

  • pie dish
  • blender, stick blender or food processor (for pureeing the filling)
  • frying pan

Making the pie crust

Prepare the pie crust by following this instruction and put it in the cold to wait for the filling to be ready. If you want a really tender and tasty base, use whole wheat flour instead of wheat flour. Then the bottom becomes darker and more fibrous.

If you prepare the pie dough well in advance, put it to the fridge for at least half an hour or even the day before.

If you are in a hurry, put the pie crust into a freezer. Then 10-15 minutes is enough. The point is just to get the pie dough to set so it's easier to handle.

Preparing the tofu filling

We prepare the juicy vegan filling for the pie using the same technique as in this vegan ham and cheese pie, i.e. using a "mush" made of tofu and cream. The advantage of this tofu-based filling is that it hardens well and the end result looks very similar to an egg-based filling.

This time we use tofu marinated with basil, garlic and soy sauce, which is a good companion for other fillings.

Do it like this: Add all the filling ingredients to a blender and puree into a smooth mixture.

Preparing the soy and corn filling

Saute onion cubes in a frying pan in oil until they are soft and translucent.

Add soybean meal, water, chili sauce, spices and corn kernels. Cook the filling ingredients on medium heat until the water has been absorbed into the soybean meal and the corn kernels are cooked.

Baking the pie

Preheat the oven to 200 degrees Celsius (400 Fahrenheit).

Add the soy and corn filling on top of the pie crust in the pan. Then frost the pie with the tofu filling.

Garnish the pie with halved tomatoes and corn chips. Finally, sprinkle vegan grated cheese on top.

Bake the pie in the middle of the oven for 25-30 minutes, until it's colored on the surface.

  • 0.25 tsp salt
  • 150 g cold margarine
  • 12 tbsp cold water

Tofu filling

  • 300 g Marinated tofu
  • 250 ml oat cream for cooking
  • 1 tsp Tamari soy sauce
  • 2 tablespoon of tapioca starch
  • 2 tbsp nutritional yeast flakes

Soy-corn filling

  • 1 tablespoon of rapeseed oil
  • 1 onion
  • 2 dl light-coloured soy meal
  • 3 dl water
  • 0.25 tsp black pepper
  • 0.5 tsp salt
  • 1 teaspoon dried oregano
  • 1 teaspoon dried parsley
  • 0.5 dl sweet chili sauce
  • 100 g frozen corn

In addition

  • approx. 6 cherry tomatoes
  • corn chips
  • 100 g vegan grated cheese

  1. Start by making the savory pie dough according to this instruction.
  2. Put the pie dough in either the fridge or the freezer to harden, depending on how busy you are.
  3. Preheat the oven to 200 degrees Celsius (400 Fahrenheit).
  4. Prepare the tofu filling: add all its ingredients to a blender and puree into a smooth mixture.
  5. Prepare the soy-corn filling: Peel the onion and chop it into small cubes. Saute onion cubes in a frying pan in oil until they are soft and translucent. Add soybean meal, water, chili sauce, spices and corn kernels. Cook the filling ingredients on medium heat until the water has been absorbed into the soybean meal and the corn kernels are cooked.
  6. Roll out the pie crust and transfer it to the pie pan according to this instruction.
  7. Add the soy-corn filling on top of the pie crust in the pan.
  8. Frost the pie with the tofu filling.
  9. Garnish the pie with halved tomatoes and corn chips.
  10. Finally, sprinkle vegan grated cheese on top.
  11. Bake the pie in the middle of the oven for 25-30 minutes, until it's colored on the surface.
