I just tried using it for the first time frozen chickpeas. I had a lot of chickpeas left over recently after the experiments with spinach, so I shoved them in the freezer when I couldn't think of anything else.
The good news is that chickpeas clearly don't do well in the freezer!
The following recipe contains two compatible, nutritious, vegan fillings. I didn't particularly try to make them low carb, but that's just the way it was. Both fillings contain a lot of protein.
Best of all, the fillings consist of such basic ingredients that all the ingredients can be found in your cupboard right now!

Chickpea filling
The first filling contains chickpeas and vegetables. First cook the vegetables and onions quickly in a hot pan, and then add the ripe chickpeas and spices.
I happened to have half a bag of Fajitas seasoning in the cupboard so I used it for this. However, you can use a basic taco seasoning mix instead, or whatever you happen to find.
Soybean filling
The second filling contains dark soy meal, crushed tomato with paprika and spices. The filling is the easiest in the world: mix all the ingredients together in a pot and cook for about 10 minutes.

Other fillings
These toppings are optional, but highly recommended!

- Salsa sauce
- Vegan crème fraîche, e.g. Oatly Fraiche
- tortilla chips
- Vegan grated cheese
- Salad
- Chopped cucumber, tomato, paprika

- 300 g canned chickpeas
- 200 g corn
- 1/2 paprika
- 1 onion
- 0.5 dl Fajita Spice Mix or taco seasoning mix
- 0.5 teaspoon garlic powder
- 0.5 tsp salt
- a pinch of black pepper
Soybean filling
- 2 dl of dark soy meal
- 4 dl of water
- 1 pr crushed tomato with paprika
- 0.5 dl taco seasoning mix
- 0.5 tsp salt
- 0.5 teaspoon garlic powder
Optional fillings
- guacamole
- salsa sauce
- vegan crème fraîche
- vegan grated cheese
- tortilla chips
- lettuce leaves
- cucumber cubes
- tomato cubes
- paprika strips

Chickpea filling
- Chop paprika and onion.
- Cook the vegetables in a hot pan for about 5 minutes, until they are just barely cooked.
- Add chickpeas and spices.
- Mix all the ingredients and cook for another 5 minutes until the chickpeas are heated through.
Soybean filling
- Add all ingredients to a small saucepan.
- Cook for about 10 minutes until the soybean meal is cooked.
