After the holidays, you long for simple and straightforward food that doesn't need to be specially prepared, right? This veggie roll pan is a real savior on weeknights: it only takes five minutes to prepare, and after half an hour the finished dish is waiting in the oven.

This could also be called a "freezer drain pan", because I went through the freezer and used all the missing bottoms of the bag. Some of the vegetables had already managed to collect frostbite, but that doesn't hurt in this dish either.

Tip: You can rinse the frozen vegetables under cold water before adding them to the tray, and the chips will melt away.

Necessary vegetables

You can consider this list as a guideline, because many kinds of vegetables are suitable for the recipe. One exception though: for some reason, broccoli is not at its best in this dish.

  • potatoes - about half of the contents of the tray should be potatoes
  • baby carrots
  • cauliflower
  • edible mushrooms
  • peas

There should be about 1.5 – 1.7 kg of vegetables in total, i.e. the size of a baking tray, as in the picture.

Vegetable balls suitable for the recipe

I used Vegetable protein balls from IKEA, but also Hälsans Kök's vegan vegetable rolls suitable for this. Both are very similar in taste and texture.

Wash the potatoes and cut them into large blocks. Put the potatoes, vegetables and vegetable balls on a baking sheet lined with baking paper.

Add all the spices and mix them by turning the contents of the pan thoroughly. This is easiest to do by hand. The icy vegetables pinch the fingers a bit, but it's worth it if you're quick...

Frozen vegetables on a baking sheet

Try to spread the spices as evenly as possible on all the potatoes and vegetables. And it doesn't hurt, even if the spices get on top of the vegetable balls.

Before frying, place the potato blocks evenly on the tray, so that each one has space and they are not on top of each other. In this case, they cook evenly on all sides.

You can let the peas fall to the bottom of the pan if you like, because they are so small that it is not worth roasting them too much.

Bake in the oven at 225 degrees for 25-30 minutes.

That's really all! Ready food, a whole meal is waiting in the oven - nothing to do but eat.

  • a pinch of cayenne pepper
