This lovely pasta started from a lucky shopping spree. I had always associated tofu with Asian dishes, and I certainly wouldn't have purposefully bought tofu flavored with tomato and basil. Now, however, I had to come up with something good. And it turned out really well! The pasta tastes good even for picky eaters in the family.
Caprese pasta usually contains mozzarella, but in this recipe, tofu and cream do the job.
Making the sauce
You should first saute the onions, i.e. fry them on a low heat until they become soft and translucent. After that, you can add almost all the remaining ingredients.

The tofu should remain soft and you don't need to drain it much before use. Of course, you should squeeze out most of the liquids.

Add the tofu to the sauce only at the very end.

The filling pasta caprese goes well with tofu seasoned with tomato and basil.
Ingredients
- 400 g pasta
- 2 tbsp cooking oil
- 1 pc onion (chopped)
- 4 1 clove of garlic (pressed or chopped)
- 400 g whole peeled tomatoes (or an equivalent amount of crushed tomatoes)
- 2 spoonful of tomato puree
- 3 dl of water
- 2 tablespoon of dark balsamic vinegar
- 1 fresh basil in a pot
- 1 tsp salt
- 1 tbsp of sugar
- 1 a pinch of black pepper
- 1 dl oat cream
- 250 g SoFine Tofu Tomato-Basil

- Boil about 3 liters of water and season the boiling water with salt (about 1 teaspoon). Cook the pasta in water according to the instructions on the package.
- Saute onion and garlic in oil in a pot.
- Add the canned tomatoes (or crushed tomatoes), tomato puree, water and balsamic vinegar.
- Chop half of the basil with, for example, scissors and add to the sauce.
- Add salt, sugar and black pepper.
- Simmer the sauce over low heat for about 15 minutes.
- Squeeze most of the liquids out of the tofu or absorb them on a paper towel.
- Dice the tofu.
- Add the tofu and oat cream to the sauce.
- Simmer the sauce on a low heat for another 5 minutes.
- Mix the pasta and sauce together.
- Garnish with basil.
