These melt-in-the-mouth butter buns are ready in less than an hour and only require one rise. Their role model is the Americans dinner roll - rolls. The idea is that you have time to spin the rolls while dinner is being prepared on the stove.

soft vegan rolls

You only need 6 ingredients for these:

  • semi-coarse wheat flour
  • sugar
  • dry yeast
  • salt
  • almond or cashew milk
  • margarine

For baking, you can use either a loose-bottomed pan, like I did, or any other pan of a suitable size - it doesn't have to be round. As long as the pan is well greased, the rolls can be removed from the bottom of the pan, for example using a large spoon as a help.

The airy and quick-to-prepare butter buns require only one rise.

  • 7 dl wheat flour
  • 0.5 dl sugar
  • 1 tablespoon dry yeast (= 11 g i.e. a bag of Sunday dry yeast)
  • 1 tsp salt
  • 3.5 dl almond milk (or cashew milk)
  • 50 g margarine (soft or melted; e.g. Keiju Lactose-free 70%

In addition

  • a little margarine on the buns

  1. Heat the oven to 80-100 degrees.
  2. Mix flour, sugar, dry yeast and salt in a bowl.
  3. Heat the almond or cashew milk to 40 degrees in a microwave-resistant container. This takes 45-60 seconds. If the liquid is too hot, the dry yeast will die, so in that case let the liquid cool down before use.
  4. Add almond milk and soft (or melted) margarine to the dry ingredients in a bowl.
  5. Knead the dough e.g. with the dough hooks of a hand mixer for 3-4 minutes until the dough is smooth and comes off the sides of the bowl, as in the picture. It must not be too hard, but it must be able to be shaped into rolls.

If the dough is too hard, add a little warm almond milk or water. If the dough is too loose, add a little flour.

  6. Leave the dough to wait until you grease the baking dish.
  7. Grease an ovenproof dish, e.g. a cake pan.
  8. Shape the dough into small balls and place them loosely in the pan, as in the picture.

  9. Move the pan to an 80-100 degree oven and rise for 20 minutes. The end result should resemble this:

  10. Remove the pan from the oven and heat the oven to 200 degrees. If your oven has a quick heating function, you can use it at this point.
  11. Move the pan back to the oven and bake the rolls for about 15 minutes.
The rolls may look ready already at 12 minutes, but you shouldn't take them out yet or they may remain raw and doughy inside.
  12. Grease the rolls with a dollop of margarine as soon as you take them out of the oven.
